Comfort food brings to mind unhealthy items: macaroni & cheese; kraft dinner; cookies. Recently I came upon what was described as a comfort food by my favourite source of recipes…The New York Times. Quite honestly it sounded terrible yet it got a 5 star rating. After reading through the comments, or at least some of them as there were 333, I decided that I must try this incredibly boring, gross-sounding recipe. Surprise…we have it perhaps once a week when it is just the 2 of us and when I am low on groceries and time. Try it and let me know your thoughts.
Ingredients
- 1 can of good tuna, well drained (they suggest packed in oil but I use water packed)
- 2 tbsp mayonnaise
- 2 tsp toasted sesame oil
- 1/2 tsp soy sauce
- 1 cup cooked rice
- Toasted white or black sesame seeds and chopped scallions, for serving
Method
- In a small bowl combine the tuna, mayo, sesame oil and soy sauce to combine.
- Put the hot rice in a bowl and spoon the tuna mixture on top.
- Sprinkle with chosen toppings.
- That’s it…enjoy!!
Tip for reheating rice: put cooked rice in a sieve and pour boiling water over it – easy, safe and delish!
