What do a cello and quinoa have in common? Both were what made a Sunday afternoon recently a real treat when my cousin-in-law, Lois, invited me to lunch and then to the National Gallery of Canada to see an amazing performance celebrating the new Jean Paul Riopelle exhibit. Performing a contemporary dance with the choreography designed to reflect the works of Riopelle was Ottawa Dance Directive, moving to the magic created by Raphael Weinroth-Browne on cello. It was so well received!
Also VERY well received was the lunch served to me by Lois, an amazing salad from PinchMeGood.com that is so versatile that you can mix and match with whatever happens to be in your fridge. She, for example, had a lovely mango which magically appeared in the salad. Enjoy! AND if you ever get a change to see Ottawa Dance Directive OR Raphael Weinroth-Browne do so!
Ingredients
- 1 cup chickpeas, canned
- 1/3 cup cucumber
- 1/8 cup dill, fresh
- 1/3 cup golden raisins
- 6 cups kale
- 1/8 cup parsley, fresh
- 1/3 cup red onion
- 1 cup quinoa, cooked
- 1 tsp olive oil
- 1/3 cup pepitas
- 1/3 cup feta cheese
For the dressing:
- 1/4 cup olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp dijon mustard
- 1 tbsp lemon juice
- 1 tbsp maple syrup
- kosher salt and ground pepper
Mix salad ingredients together and toss with dressing. Enjoy!
